Segmentation of cocoa beans in digital images of cutting boards
Abstract
The cut proof is a world-wide test, consisting of the olfactory and visual analysis of almonds by a specialist. The evaluation is made with 300 randomly selected almonds and assists in the total classification of the batch, indicating, for example, if it can be used for the production of gourmet chocolate. In this sense, the work presents a methodology for the segmentation of almonds in a cutting board using the concepts of image processing, which can be used in a later process of classi fi cation and quali fi cation. The methodology consists of the previous treatment of the image to then use edge detection, segmenting and extracting the almonds from the cutting board. The methodology was implemented and tested for the classes: flattened, slate, germinated, insect, brown, partially brown and violet, showing promise.
